Ayala Perle d'Ayala Prestige

Perle d'Ayala is the vintage prestige cuvée of Ayala, an Aÿ-based maison founded in 1860 and now part of the Bollinger family group. The blend leans heavily Chardonnay (around 80%) with a smaller Pinot Noir backbone, drawn from grand cru vineyards.

The wine spends at least eight years on lees in the maison's Aÿ cellars and carries a low dosage to preserve the cut and chalk character that Ayala has built its identity around since its 2000s repositioning.
