Cuvée Elisabeth Salmon was first declared in 1988 in tribute to the wife of co-founder Louis Billecart, who lent her family name to the maison in 1818. The blend is roughly half Chardonnay and half Pinot Noir, almost entirely from grand crus, with a small share of red wine from Mareuil-sur-Aÿ giving the colour.

Billecart-Salmon's signature long, cool fermentation and extended lees ageing — usually around ten years for Elisabeth — produce a notably fine, delicate rosé style that has become a critical reference point for the category.
