Cuvée Nicolas-François (sometimes written "La Grande Cuvée") is Billecart-Salmon's flagship vintage assemblage, named after the house's founder Nicolas-François Billecart. The blend is roughly 60% Chardonnay and 40% Pinot Noir, sourced exclusively from grand cru villages, with no Meunier.

The cuvée is bottled only in declared years. Long ageing in chalk cellars before disgorgement (often a decade) and a low dosage frame the house's signature mid-weight, chalky style at vintage level. It sits between Brut Réserve and the rosé prestige Cuvée Elisabeth Salmon in the line-up.
