Cuvée William Deutz is Deutz's vintage prestige cuvée, first declared in 1959 and named for one of the two German co-founders who established the maison in Aÿ in 1838. It is sourced exclusively from grand cru and premier cru villages, with Aÿ supplying a substantial share of the Pinot Noir.

The blend is roughly Pinot Noir-led, balanced by Chardonnay and a small Meunier component. Long lees ageing (around seven years) in the maison's cellars at Aÿ gives the wine breadth before release.
